It’s That Time Again…Meal Plan Monday!

Hello again!  I’m back again to share another week’s worth of healthy, delicious recipes.  I hope you are enjoying them so far!  And if you’re ever looking for more, head over to my blog for many, many more recipes…and MOST of them are healthy!  Haha!  But hey, we all need to splurge every once in a while, right? 

It’s starting to warm up a bit here in Kentucky, and it’s really making me long for summer.  So, this week I’m going to share a few recipes that we enjoy during those warmer months.  I’m secretly hoping that by eating ‘summer foods’, mother nature will get the hint and stop toying with us by sending a warm day and then a cold day, a warm day and then a cold day.  One can hold out hope, right?

First, Chicken Mole - This recipe includes instructions for both the chicken and a nice salsa to serve along with the chicken.  If you can’t find the ingredients for the salsa right now, I encourage you to still give the chicken a try.  You may even want to experiment with different fruits in the salsa too!

 

Skinny Chili Cheese Fries make a great ‘game-time’ meal!  We rarely eat in front of the TV, but if a game is on, I’ll sometimes fix these cheey fries and we’ll gather around the coffee table and eat while watching the game.

If you’re looking for a dish to impress someone, then give my Bronzed Salmon a try!  It is very simple to prepare, but looks very elegant.

My BBQ Pork Ribs do require a grill, so if it’s still cold in your area, you may need to bundle up for this one!

When you need something that doesn’t require a lot of ingredients or time, try my Chicken Taquitos – these are also great as appetizers for a party!

 

For a fun side dish, whip up a batch of my Parmesan Tater Tots.  These are much healthier than the kind you find in the frozen food section!

 

And for a yummy dessert, try Fresh Fruit Turnovers with your favorite seasonal fruit.
