
Hey…it’s Carla again! Did everyone survive Super Bowl Sunday?? We aren’t really football fans, so we didn’t even watch the game, but some friends did invite us over for dinner, and boy was it good! My friend Dave made us a great meal (and I’m trying to get him to share a few recipes with me!!!):
- Stuffed portabello mushrooms – huge portabellos that were piled high with a cream cheese/bacon/crab mixture – they were to die for!
- Stuffed pasta shells – a yummy spinach cheese filling!
- Shrimp Scampi – I could have eaten my weight in that…it was THAT. GOOD.
- Steamed broccoli
- Cheesecake for dessert.
So, yeah, it probably wasn’t the healthiest meal I’ve had in a while, but man oh man, it was gooooood! And if you went to a Super Bowl party, chances are you weren’t presented with a big platter of fresh veggies and fruit. It was probably fried food, chips, dips, etc. So, this week I’m sharing some healthy recipe to get us all back on track after the weekend!

BLT Wraps - These quick and simple wraps are a cinch to throw together, and are great for dinner or lunch!

Easy Pesto Chicken - You can make your own pesto for this, or use a purchased pesto…either way, this dish is quick to prepare and delicious!

Smothered Pork Chops -Although this dish takes a bit longer to prepare, the final result is well worth it!

Tuscan Pasta & Beans - This dish is a great way to sneak in a few extra veggies!

Quick & Easy Taco Soup - This soup is perfect for those chilly nights when you want to stay in and stay warm!!

Rice Pilaf – A versatile side dish that goes with most any main recipe!

Caramelized Apple Crepes - You’re guests will never know they’re eating healthy with this dessert!
